I have to say, I am such a big fan of light and juicy lemon loaf cake. For me, there is simply nothing better, especially in summer. But to make the classic lemon cake also suitable for winter (and turn it into a vegan treat as well), I added some spices like cardamom, turmeric and cinnamon to the dough and in this way, turned it into the perfect treat for afternoon tea or coffee. If you like spices and lemon, you will simply love this cake, I’m sure. But what am I talking, just try it yourself!
Recipe: vegan lemon loaf with spices
Ingredients for one loaf:
For the dough:
– 350 g spelled flour
– 100 g ground hazelnut
– 4 EL rice syrup or maple syrup
– 2 TL Just Spice “Pancake Spice” or a mix of cinnamon, cardamom and vanilla
– 1 TL ground curcuma
– 1 pack baking powder (bio)
– 300 ml oat milk or almond milk
– 2 EL freshly squeezed lemon juice
– some lemon zest
– some coconut oil or margarine for the baking pan
Für den Guss:
– 5 EL powdered sugar
– juice of 1 – 2 bio lemons
Add all ingredients together in a bowl and mix them until you get a thick dough. Pour into a baking pan and bake at 180 degrees Celsius for ca. 50 minutes.
Let it cool down afterwards and mix lemon juice and powdered sugar until it turns into a viscous sugar coating. Spread it on the cooled down loaf and let it dry.
