Hello my dear readers! Even though I’m on a raw and vegan smoothie challenge at the moment (which is going great, I’ll tell you all about it next week!), I wanted to show to you one of my favourite summer recipes today – a super healthy, tasty and fresh salad made of red beet, feta cheese, avocado and lemon. It also takes no time at all to create this delicious dish! Perhaps you feel inspired on one of these hot summer days to try it out – it’s perfect for lunch or dinner as it’s light, rich in proteine and vitamines. Enjoy!
1-2 ripe avocados
250 g feta cheese
2 fresh lemons
3-4 teaspoons olive oil
2-3 teaspoons balsamico
salt / pepper / oregano
Cut the red beets into small pieces and cook or steam (steaming preserves more of the healthy substances of the beet) them until they are “al dente”. Mix with oil, balsamico, salt, pepper and oregano and leave for a while.
Crumble the feta cheese and put it into a bowl. Cut the lemons and the avocados into quaters and prepare on the washed red beet leaves.
Mix the red beet and feta cheese and place it in the middle between the lemons and avocados. Add some chipped pepper on top and you’re done. Enjoy!
