Everyone’s talking ’bout banana bread – and they’re rightly doing so! These days, I’m discovering new recipes and posts tagged #bananabread on Instagram every day and for a good reason: banana bread not only tastes incredibly good, it is also really quite healthy. Especially, if you are baking it the way I do.
This recipe is not only vegan, but also free of industrial sugar and other nasties that our bodies can’t quite process, anyway. Instead, is is an incredibly juicy and fluffy delicacy, a perfect breakfast, an ideal snack and lovely with a cup of coffee or tea in the afternoon.
But I didn’t tell you the best thing about it, yet: you only need 6 (maximum 7) ingredients for this heavenly banana bread, which you could also almost call a cake. I promise: you’ll never wann eat anything else in your life, anymore after having tasted it once – at least that’s how I feel these days, hehe. So, do try it out and let me know how you liked it!
Recipe: vegan banana bread
For one bread you’ll need:
– 170 ml plant milk (almond or oat milk)
– 350 g oats
– 50 g walnuts
– 5 ripe bananas
– 1 tsp cinnamon
– 15 g baking powder
– (if you like: 2-3 tsp maple syrup)
Peel 4 bananas and put them in a bowl, together with the plant milk, cinnamon, perhaps maple syrup and baking powder. Mash the bananas with a fork until you have a creamy substance.
Mix the oats with a mixer to turn them into flour. Add the oat flour to your creamy banana mash until it turns into a homogenous banana bread dough. Add walnuts to your dough and fill it into a baking ban for bread. Peel the final banana and cut it in two halves. Decorate the bread with it.
Bake in a pre-heated oven for 60 minutes at 180 – 190 degrees Celsius. Voilà, bon appétit!
